Back to work...
I can't believe it's been almost a year since my last post. If that is not a testament to how busy our life has been, then I don't know what is. Our lives have been so richly blessed with the birth of our son, Douglas "Hale", and we have been soaking up the sweet time we've had with all three of our babies daily. This week I return to work, which I am trying desperately to approach with an extremely positive attitude, but it is difficult. I will miss holding, kissing, rocking, singing to, and loving on my sweet Hale whenever I want and I will miss picking up Rich and El early so I could have all of my babies together. I will miss cleaning my house for the first hour of every day, and organizing with my friend Margaret. I will miss having dinner perfectly ready and the kitchen clean before Jonas gets home and spending the time we would have spent cleaning playing tackle and running in circles with our kiddos. Wow! I must stop, too many things I'm going to miss!!
I'm convinced that the only way I'm going to be able to spend quality time with my kids every afternoon/night, get in a split workout (half at 5 am and half at 4 pm) is if I am perfectly planned and prepared for meals each night. We typically eat 4 weak night meals at home a week. The 5th meal usually comes at Ensworth for a basketball game, but sometimes we bring our dinner to the gym...I'm hoping that we'll have leftovers and that can cover a 5th night if we have it. I'm going all crockpot this week since it's my first week back! Here's the menu:
Crockpot Black Bean Enchiladas
Quinoa Chicken Sweet Potato Stew
Vegetable Beef Stew
I can't wait to see how it goes!
